I have no idea how my teacher did this

 

How do i color over colored levels only?

If you right click a layer, in the layers panel, and choose "Create clipping mask" a small downward arrow will appear and it will only affect the image where the pixels on the layer below are solid. If any areas of the layer below are transparent then the upper layer also becomes transparent in those areas. In short, the upper layer is now "clipped" to the layer below.

As a shortcut, you can also hold down the Alt (Windows) or Option (Macintosh) key and click the thin line between the layers.
