Photoshop 2024 / Mac Sonoma 14.4.1: Color picker default white

Problem with Photoshop 2024 on Mac Sonoma 14.4.1: Color picker default white

 

I can't pick clean pure White on Color Mode CMYK. On default it is 0/0/3/0.

Another problem: 

A graphic with white background appears with grey background in Indesign.

 

Does anyone knows an quick answer?
