Photoshop Entsättigung Verlauf

Do you mean with "entsättigen" the color saturation from color to black and white?

If I would try to create a copy of the picture as a new layer and desaturate it. Then create for this layer a  gradient mask from black to white or vice versa. It depends on what you like to get.
