So photoshop can not to be set for save jpg format for every new document...
What you have in Photoshop is an open document.
In Photoshop you normally will use layers and you normally no not want to loose your work.
If you open a flat document into Photoshop add layers, flatten and use menu File>save or shortcut Ctrl+S that flat file you opened will be over written there will be no dialog.
If you are creating new document and have never save it flat or layered the new document in Photoshop has no backing file. You can not use Save. If you try to use save Photoshop will switch to Save As and open the Save As dialog and may set the file type in the dialog to psd or a flat file type if the current document state is a single layer.
Photoshop menu File>Save has no dialog.
If the current document state is consistent with the documents current backing file type the current layer state is supported by the backing file type the backing file will be over written.
If the backing file type is one the does not support layers and the current document being saved has layers Photoshop will switch to Save As Photoshop will open the Save As dialog and set file type PSD. If you save that PSD Photoshop will switch witch the open document to one backed by the psd file just saved. The document that was backed by a flat file will no longer be open in Photoshop.
If on the other hand you change the file type to Jpeg or png the file saved written will be a flat jpeg or PNG file. The document in Photoshop will still have layers. These layers are not backed up by any layered file the document in Photoshop still has no layered backing file the original file opened is still the document associated The in Photoshopn document may haave changes like any document open in Photoshop may have changes the have not been saved yet.
