Until now I've been able to hold down the Shift-key to constrain proportions when scaling images with Free Transfor, but it just stopped working after I updated my Photoshop version yesterday. How do I get it back?

You must be on CC 2019. They made it the default now. So to constrain proportions, you don't need to use the modifier key. You use the modifier key to have unconstrained now.
