Slow Photoshop and After Effect with 32gb of RAM and a 3070

I have a problem for several months, I have a lot of latency on After Effects and Photoshop, yet I have allocated a lot of ram to both applications.

I don't understand, when I have large documents on photoshop for example it happens that it freezes for several long seconds, until it crashes.

On After Effect, it happens to me to have big freezes, and impossible to have a fluid preview...

If someone can enlighten me.... That would be great!
