Suddenly slow to place images, taking a ton of scratch disk space

Hey gang,
I'm using a '19 iMac, 64gb RAM, 1tb internal SSD with 260gb free space.

Context for my work: webmaster/photo editor/video editor at the dayjob, illustrator/designer in freelance, with some pretty massive files (up to 700-ish layers), all without issue.

In the past two days, I've had a ton of difficulty in placing just a handful of jpgs into a 540x540 square for cropping. The original files are all small, under a few mb, and simple jpgs as mentioned. Why then would PS be taking up my entire 260gb scratch disk and failing to allow me to place all of the images? The most I've been able to place at once is five and that's nowhere near ideal. Exporting from layers takes five minutes for those five small images.

I've checked my settings, disk health, and reset/restarted everything I can think of with no improvement.
Anyone else going through something similar?

Double-update: I'm just going to burst into flame, it's stopped being awful and is back to working perfectly for no apparent reason. Imma leave this post up and will update if it falls down again, but I think I'm good? ¯\_(ツ)_/¯

Update: the whole machine just crashed and (thank the lord) restart while exporting layers. The only other software open were an email client and two browsers without a ton of open tabs. I am displeased.
