Is there a fast way to remove the grey matter around the text besides using the eraser tool?

Have a play with the "Blend if" facility.

Mylenium, has a good suggestion. Another way you can use brighten and contrast to the section needed. Basically you have to play with the photoshop features.

Create a layer mask using Image --> Calculations, then tweak the mask with a Levels or Curves adjustment.
