What's the difference between PS icon with a square frame or PS icon with rounded corners?  How do I know which one is my normal app?  Is there a rule of thumb for the different icons.

The 2020 updated failed to uninstall the 2019 version. The square icon is your old version, you can uninstall it.

Some people seem to have problems with Photoshop 2020, so it might not be a bad idea to keep Photoshop CC 2019 around if storage space allows.

On a Mac hovering over the icon in the dock will display the name of the application and that includes version information – »Adobe Photoshop CC 2018«, »Adobe Photoshop CC 2019«, »Adobe Photoshop 2020«.

What do you mean by »normal app«?

The rounded icon is the newer one and denotes that the app can save Cloud documents.

Ha, I hadn’t made that conclusion myself and assumed that was just a design choice …

No, it was a concious decision to denote which Adobe apps work with cloud docs.
