You broke how masks work.

Before, it was possible to apply gradients to a mask and move them around until the right position was found. Now, when moving gradients, they immediately paint the mask as if using a brush.

To reiterate: As a work-around try using Foreground to Background instead of Foreground to Transparent.

It still works as before here (using Photoshop 27.2 on Windows 11). A couple of caveats though:

  1. Make sure you are using the Gradient tool not the Classic Gradient tool (set in the options bar)
  1. When you go back to edit the mask choose the gradient tool again. Without it the controls for the gradient will not appear on screen

In version 27.3, they broke gradients in masks. Please update and check.

Just downloaded 27.3. Same answer as above, it works with the two caveats I mentioned.
