PS Express text editing issue

When adding text to a photo it seems to naturally set every two to three words in a row. This is opposed to the normal way of a straight on sentence with the option to resize and adjust how the sentence is structured. It's infuriating that there is no procedure for this or resolution.

Anyone else?
