Stroke option is inaccessible (dimmed) in the text color properties dialog box

How do you apply a stroke to a font from scratch?  When we enter new text in a default text box, we cannot select the STROKE option from the COLOR PROPERTIES dialog for the selected text.  Interestingly, we can choose certain styles from the text menu, that include outlining, and see that the stroke (outline) option is available for those styles from the COLOR PROPERTIES dialog.  Are strokes (outlining) only available for certain fonts or all fonts?  Why can't we apply a stroke to a basic font such as Arial?

Pick a style with a stroke then change the font.

Ann, thank you so much for the reply.  Likely, obvious to experienced users, but sure seems to be an unintuitive approach for beginners.  Do you know if there is a reason for this odd approach without some kind of warning in the help resources?  Might help us anticipate other similar backdoor approaches.  Thank you so much.
