Different controls

My controls on the right (premiere rush for ipad) are different to any tutorials on Youtube. I don't seem to have anything under the 3 dots top right. Also I don't seem to be able to add text.
The screenshots show what happens when I click on those 2 icons. What do these mean and how can I add text?

    These tutorials might be older. You can no longer add text, you need to add a template and then alter that. I hope the info helps.
