Saving Small Clips?

I realize I may not be doing this the best way, but would appreciate some insight. 

I have 2 hours of interviews that I'm editing into one piece. Much of that will be discarded, I'm down to about 30 minutes. That 30-minutes will now become 3-5 different video shorts. Is there a way to separately save each of the clips (30s-5min) for later use?
