I'm trying to edit text colour in Acrobat DC and it changes it from CMYK to RGB is there a way to keep it CMYK?

This is particularly bad (sad) that when editing a CMYK object your only choice for a color change is RGB. I just tested it and it does convert the color space to RGB for the object you change.

However, there is a Preflight command for converting everything in the PDF to CMYK.  Apply this after the edit.

Yes I've used the convert colors after but seems daft that it does this weird conversion to RGB in the first place.

Many "Print production" users, which I am, complain about this nonsense since this tool release… with Acrobat X !!!
