Acrobat DC PDF changes font from Word 2016 document

Using Acrobat DC (Continuous release 2018.011.20055) on a MacBook Air (mid-2013) running macOS 10.13.6.

I have a document in Word 2016 for Mac that I need to convert to a PDF.

Every time I convert the file—whether by using the "Create PDF" in Word, or by File->Print and Save as PDF, or by Create PDF from File in Acrobat—one font is changed from the one used in Word (Goudy Old Style) to Calibri.

Goudy Old Style is synced to the computer through TypeKit. If I click "Edit PDF," I can manually select Goudy Old Style in the Font drop-down menu under Format of the Edit PDF tool, and change selected text to that font.

So, basically this is kind of a two part question:

How do I get Acrobat to stop substituting Calibri for Goudy Old Style when creating the PDF?

Or, alternately, how do I do a global font change in Acrobat to correct the mistake that it seems to be making when creating the PDF?

I saw an answer that mentioned using Word to embed fonts via the Preferences under the Adobe tab of the Ribbon. Font embedding is not available on any version of Word except Windows. As I am not using Word for Windows, that "solution" does not apply.

I saw a different answer that suggested that font problems like this cannot be corrected in Acrobat, as it should be done in the source file. In this case, the source file has the correct font, and Acrobat appears to be improperly substituting for it. So, I can now think of at least one use case where Acrobat should be able to do global font replacements, although the best solution is for Acrobat to not substitute for a font that Adobe itself installed and manages on the computer.

You say Acrobat is doing this during creation, but you also say it happens in Save As PDF. Now, that doesn’t use any Adobe tech, it’s built into Word and made by Microsoft. So in that case at least, it’s Word doing it. Maybe the others too. Sorry, no idea why.
