Question

Add print date to header on all saved documents

Is there a way to set a default so that every time I save a PDF it adds the save date to the document (header, footer, somewhere)?  When I save documentation from the internet, all users need to know when the data was saved.  Sometimes these are printed, so it needs to be on the actual document.

There's no global setting that does it for all files, no. You can achieve it by embedding a script in each one of the files you want to apply it to, though.
