Adding date after my signature

This used to be a very easy task to do but over the years Adobe has changed formating to which nothing is easy anymore.

1) Add my siganture

2) Add the date

3) Request clients signature & date

No idea on how to add my date now as the software has gotten so clunky.

Please advise.
