Adobe Acrobat add signature button creates a blank screen + limited access error

When I go to add a new signature within my Adobe Acrobat window, Acrobat gets a black/grey overlay with a tiny white dot in the centre of the screen and the only interaction I can make with thew software is to press esc, which closes the overlay and I am unable to add my signature. I have noticed that there is an error when I launch CC, saying that I have limited access. I have run the limited access repair tool as administrator, I have run Acrobat repairs, I have reinstalled Acrobat and Creative Cloud from fresh, run system file scans, and restarted my server several times, but it continues to be an issue.

I should note that the software is running on my Windows server 2022 virtual server, hosted on VMware. Any help you guys could provide would be most appreciated.
