Adobe Acrobat XI Won't Perform OCR

I recently attempted to run OCR on a previously scanned document using Adobe Acrobat XI. While the text recognition runs like you would normally expect, it never actually renders text; instead, it keeps all of the text as a single image. As a note, I did not receive any errors during the text recognition process and, had I just closed the file without attempting to work on the text, I would not have known there was a problem. I'm not sure why this would be the case, as the other files I have recently performed text recognition on have worked without trouble. Any suggestions to fix this issue would be helpful.
