Go to your Adobe account page: adobe.com
Sign in with the Adobe ID you used to purchase the subscription. Click on your avatar.
Click on "Plans" in the top menu.
Under your Acrobat Pro plan, select "Manage Plan".
Choose "Cancel your plan" and follow the prompts.
