Apostrophe in name appears as symbols in digital signature

I have Adobe Acrobat Pro DC Version 2019.010.20069 and I get a weird string of symbols that appear in my digital signature whenever I sign something electronically. My last name has an apostrophe in it and when the signature is generated, the apostrophe is replaced with symbols and numbers to appear as: "&039#;". I've tried checking for updates and repaired the installation, but the problem remains. Does anyone know how to fix this? Any assistance would be appreciated since I need to sign quite a few things and would prefer to have my name appear properly. Thanks!
