automatic OCR. How can I do this with adobe products?

I believe you are willing to run the OCR automatically on all the pdfs without using the "Enhance Scan" feature? This can be achieved slightly but not exactly as you wished to.

Acrobat DC automatically OCRs file, if you try to edit it using the Edit Tool. And how does it works, for that you can see the help document here- Convert PDF to instantly editable text, OCR software | Adobe Acrobat DC

Apart from that there isn't any settings in Acrobat that you can enable to achieve to automatic OCR.
