Best way to convert scanned handwritten notes to searchable pdf

Hi, 

I'm new to creating pdfs and only have Acrobat 7 professional.

I want to scan a bunch of personal handwritten notes to a pdf doc - which i can do - making an image based pdf.

 

Then what are the options to edit the doc while viewing pages on screen, to add text that makes the pdf searchable?

eg I would type in text to add key words or terms for easier searching of my notes, or add further text to expand on the original hand written notes.  This process would save me just using a word processor to type up the handwritten notes from scratch.

 

Ideally I want the option to display or hide the added text while viewing a page at a later date.

Also I would like to be able to just view the added text and not see the original handwritten notes - or make the handwriting semi transparent?

Finally I would like to be able to extract all the added text as a simple text file.

Any advice is appreciated.

If it can only be done on a later version of Acrobat, please advise.

Acrobat 7 is extremely old, but you should be able to use it to add text using the commenting tools, which can then be searched, made hidden, extracted, etc. You're unlikely to get support for it from anyone, as almost no one has access to it any longer, though.
