I only use this to edit machining prints. After the last update I can no longer add text where I want. I select the text option. Move to the desired place for the text and click. It open the nearest box and add's the text there on top of whatever is already there. Go to delete it and it deletes everything in that box. I have been doing this foe several years. Its a daily operation until the last roll out.

As shared above, with the latest update, you have indeed moved to the new experience of Acrobat. 

When trying to add the text box now, what exactly happened? Was it a behavior with the specific file you were working with?

Make sure you have got the latest patch installed with the new rollout. 

Go to Acrobat> Help > Check for updates and reboot the computer once (you must save all the work before restarting)

Also, Navigate to Acrobat>Preferences>Security (Enhanced)>disable "Protected Mode at Start-up", "Protected View," and "Enhanced Security">OK>close and reopen Acrobat. [Windows only]

 

Rolling back to the Old UI is one of the options too. If nothing works, try that and see if it does the job as it used to.

In the last update you were probably transferred to the New Experience. You can disable it.
