Can no longer highlight & copy text Adobe Acrobat DC Version 2015.006.30527

I routinely need to complete forms. These are on a website.  I have beeen doing this for many years.  To save time I usually copy & paste from pdf of my last form and pdf of an email.  These are files saved as control A>print>save as pdf.  Been doing this for years no issues.  It started as a the odd one being fussy to now most  of them being fussy.  When I try to highlight/copy instead of highlighting just text I want it highlights about a 1/4 of the page in height, not single line anymore.  The odd one still functions.  I have not changed anything in my methods... any thoughts? 

I have tried help.Repair installation and I ensure the documents not protected, selection tool is indeed highlighted.

@Tamar24256966sjqs I would double-check how the PDF is veing saved. Chances are the settings mighte have been changed when Acrobat was updated? The "Print to PDF" process might have flattened the content into an image, with a very basic, "zone-based" OCR layer applied, even if the text looks perfectly clear to your eyes.

How else can I save an online form? Assuming of course it is being flattened. I don't really want to upload private information to an online program to unflatten. All available updates have been done.

Chances are the settings mighte have been changed when Acrobat was updated?  - where do I access these settings? I use save as pdf not adobe pdf option .
