Cannot Fill in Form - New Popup at Coursor (Fill in form fields | request e-signatures)

Question

I went to go use one of my everyday forms and I can no longer select from the dropdowns to fill out the form. The first few seconds of the form being open, everything works as it should but then I cannot select the dropdowns and this new widget with two icons (Fill in form fields | request e-signatures) appears. The field I am also trying to complete turns dark blue. It does this with all my PDFs and its never done this before. I'm guessing ADOBE did something? Screen recording attached.
