Changes PDF when I select edit

When I select to edit a PDF the formating of the page, font, lines everything changes. Letters and symbols are now being added and I am not able to edit the forms/files I need to use. Please note that these forms are not fillable documents. How do I get the PDFs to stay as they are so I may just add text / signuatures without changing the whole document?
