Hi - I am trying to change a whole document font size, colour and type (for each writeable field). Is there a way to do this as a whole action rather than going into each text field and dropdown list on each page.

You can edit all fields together.
Open the "Prepare form" tool pane, set the "Fields" panel in alpahabetic order, select all fields (click on the first, Shift+click on the last), right-click => Properties
Otherwise you can run a script from the JS Console.
