Controlling image compression when converting jpeg to pdf and then using recognise text function

I have for many years used Acrobat xi, with generally great results. I am not getting as good as results in DC. I am archiving a massive magazine collection. Scanning to jpegs. Importing into acrobat (combine files, large setting) and then using the recognise text (editable text and images, downsized to 300dpi). The text is of course excellent but the amount of compression applied to images is far to great. How/where is this controlled.

Let me add to JR that there is a setting for "Smaller size" versus "better quality."

When you did your orignal scan if you have a low setting (6 or smaller), and then you have low quality, you are compounding the damage done with JPG compression. By using TIF (my preference) or PNG 24 (not PNG 8), both of which are not lossy formats), you are avoiding the lossy image format damage.

Simply, what you need to do here is after scanning a single page, try playing with this setting to see how much you can get away with versus loss of quality.
