Create New Signature

I have Acrobat XI.  I need to change the company name in my digital signature.  I've done it before, but cannot figure out how to do it now.  I've looked through the help area and believe I'm in the correct area (Windows) Edit/Preferences/signatures.  I've titled the new signature, and see a preview of what it should look like, but it gives me no where to enter in my name, company, etc.  Help?

Look at signature appearance.

That's where I was...  "Creation and Appearance Preferences".  I created a new one and tried to edit it, but have no place to add "name" or "company"...
