Creating a fillable PDF beyond just signatures

Hello, I'm a coach trying to create a food and lifestyle journal for my clients. I have a template, but I need to add fillable text boxes in there. The problem is that the boxes are too small and carry over into the next column rather than consolidating into a single text box. I'd love to be able to type more than a few words, to where you can read it just by clicking on it. Is this possible?
