Data disappearing when combining files to make single PDF

When I "Combine Files to Make a Single PDF" in Adobe Acrobat Pro DC some of my data randomly disappears.  I used this feature to combine a word document, excel worksheet and various other PDFs and found that headers, random sentences, words and numbers were missing from my combined documents...Any ideas why this happened and how to prevent it in the future?

In a previous versions of Acrobat, this problem was associated with fonts that weren't embedded (or embedded incorrectly) in the original PDF file. Here is a proposed Workaround for Missing Characters After Merging PDF Files.

It still doesn't work - is part of my problem related to combining two different fillable forms? Also I'm using Adobe Pro DC - does that make a difference?

Ah, this is for forms. Here is a workaround for when you're trying to combine PDF forms that use the same form field names:
