Do I have to use a font (in form fields) that I know will be on the users computer?

Can I use the font (in form fields) that was used in the original PDF or do I need to use one that I know will be on all users computers?  For example, my PDF uses Myriad Pro which won't be on must users computers. I want the form fields to match. When I exported to PDF I made sure it wouldn't subset fonts. Can I then use Myriad Pro because it's included in the PDF or do I need to use something such as Arial or Calibri that I know will be on everyone's computer?

No, you don't. The font will automatically be embedded in the PDF file.
