In a previously-created PDF form, how do I edit choices in a drop-down field? I only want to change the choices in a few fields.

This is a special kind of PDF file, created using LiveCycle Designer. As such you can't edit the properties of the form fields in it using Acrobat. You will need the original application used to create it, or its newer iteration, called AEM Forms Designer.
