Editing scanned documents that contain handwritten notes

Does anyone have any suggestions for configuration modification or option that might allow us to edit a document that contains a handwritten note?

We aren't trying to change the note itself, but other parts of the document.  But when DC converts the document into an editable file, it corrupts the handwriting into the closest ASCII characters, leaving it an unreadable mess.  Ideally, we'd like to just ignore the handwriting, or perhaps convert it into a JPEG image that isn't editable, rather than deal with this.
