Fill out and sign forms offline

I have a training company and I want students to be able to complete forms and then the trainer and the student sign the forms. I can't find this option without having to use an encrypted signature, I want them to be able to draw their signature each time.

Is this possible?

They will be using Windows tablets

    Check out the Fill & Sign tool in Acrobat or Reader - it can be used offline, you can "draw" the signature, and it works with many forms/documents:

    Fill and sign PDF forms using Adobe Acrobat Fill & Sign

    It would also be supported on your Windows tablet.
