Fillable PDF no longer fillable after signing

I have Adobe Acrobat Pro DC to create fillable PDFs and sending them out via email. Once someone signs the document with an e-signature, fillable fields are no longer avaiable which is a problem because multiple people have to sign it at different stages of the document. Is there a way to have people sign it and still be able to edit the fillable forms?

Tell them not to tick the "Lock Document" check-box when signing it.

Occasionally, you or the signer may choose to lock the document after signing. In this case, the document becomes read-only and no further changes are allowed; even a signature can’t be added in the document. The Lock document after signing option is useful if you’re the last signer or the only one signer.
