filling out pdf forms

Ok, first let me say I don't like the latest updates to Adobe.  I can no longer simply fill out a form as the tools box takes up over 1/3 of my screen, and then I have two more boxes one on the right  and one practically in the middle of my document.  I have tried to minimize all of them to no avail.  Also what happened with being able to fill out a pdf.  Previously I could choose "sign" and a box appeared allowing me to enter my info.  That no longer seems to be the case.  See my prior comments about boxes all over my document that cannot be moved out of the way.  Can I install a prior version, it worked a lot better.
