Help to sanitize a fillable form with a button

Hello!

I am new to working with Adobe. I am creating a form for recruiters who fill out some sensitive information that cannot be shared with just anyone. However, we do need to send that form to hiring managers for the other info in the form. 

I want to create a button (lets call it a "scrub/save form" button) that scrubs/sanitizes or removes certain fields. I attached a sample of my form, the areas circled in red are the fields that I would need to be sanitized. 

Does anyone know how I would have this fillable form be sanitized and saved-as when hitting my "scrub/save form" button?

I apologize everyone, I am not well versed in Java scripting, like at all. I really dont know how to go about writing a script for this.
