How do I adjust settings so that when I convert a Word document to PDF, the font size will not shrink?

I use Adobe Acrobat Pro DC, and I have a Mac. How do I adjust settings so that when I convert a Word document to PDF, the font size will not shrink? I am using 11 point font, and it is shrinking it to 10.8.

You can't. That apparently is controlled by Word when it outputs either to print or PDF. Apparently, Office applications use a different coordinate system than 72pts/inch and in the process, round-offs such as you experience occur. This issue has been around since the beginning of the Office products, both on Windows and MacOS.
