How do I edit a PDF without Acrobat?

After decades of working with Adobe's excellent products, I am finally fed up with the subscription model, and am looking for alternatives.

Illustrator is nor a PDF editor and it is only available with subscription.

The best free PDF editor is LibreOffice Draw.
