If this is a Digital Signature, and not the last signature in the document, you should be able to see the deleted signature in the signature pane. You can then "view signed document" to roll the document back to an earlier state, before signature deletion. Then save the earlier version. Otherwise, you need to find a saved copy prior to the signature being deleted. Mac "Time Machine" or Windows Archive might have saved the earlier version.

Thanks for the reply.  Could you clarify?  In other words, where/how are the signatures stored?  Are they backed up somewhere by Acrobat (I don't believe local backups are set up on the system)?

No, Acrobat doesn't do backups. It will be somewhere in %APPDATA% but there's no point looking for it if you don't back up.
