I can't see basic tools layout

I am new to Adobe Acrobat, previous experience Mac Pages and txt only.

 

I have been working on a PDF document that was sent to me, in edit mode removing and adding my own input, the majority of the time with success, through trial and error.

 

My Adobe acrobat UI is per my attached screen grab (pic 1), compared to an Adobe screen grab (pic 2) which shows a tool menu tab, etc.

 

How do I show the same UI please as picture 2 shows?

This is the "new UI".  You could try to work with it, since it is probably in all our futures, but you can also turn it off: on the Mac (not Windows) View menu > Enable|Disable New Acrobat
