I have scanned 6 pages but the page numbering needs to show page 2 as page 1 and page 1 as page 2.

How can I cut and Paste complete pages to rearrange the the string of pages ie remove page 2 and re-insert as page 1

Open the Pages panel on the left, zoom out so that the entire page is visible, then simply drag page 2 before page 1 and drop it there.

You can rearrange the pages at Tools > Organize Pages
