In-Person two party signatures no sending

We have Adobe Sign downloaded on Sales staff iPads. We like the simplicity of the app, as they are only using to sign contracts. Contracts can be signed in two ways for a sales representative with a customer. Sent through email (when not present), this function works perfectly in Adobe sign. The second way, in person, we want them to both be able to sign on the same document without sending it to the customers email. The option offered for sign in person does not have the functionality for this, from what I see.
