Is there a way in Acrobat Pro to bulk convert PDF's to JPG or PNG?

Yes, using the Action Wizard. Create a new Action and add to it a "Save" command (from the "Save & Export" pane on the left):

Then click the Specify Settings button underneath it and change the output format to JPEG (or any other format from the list):

Save the Action and run it on your files, and they will be converted to the selected format.
