Issues setting up e-signatures

I am setting up a document that is supposed to be filled out and then passed around for signatures. I want certain fields to lock after the first signature and then different fields locked after a later signature. When I go to "properties" on the signature box,  I then go to "signed" and click "Mark as read-only".  I then set the drop-down to "Just these fields" and then click on "Pick...". When I do this, a blank box appears and there are no fields to select. I do not know why I do not have any fields to select from. 

Any help would be greatly appreciated. I feel like it is a simple answer that is just giving me a headache.

In your fields hierarchy you have one unnamed intermediate field which needs to be named:

 

 

As soon as you name that intermediate field (see the attached "HMC-MAT-FM-008B final copy-noUnnamed.pdf"), you can select fields to lock:

 

(I think you may not have been aware that you are creating field hierarchies: Periods in field names denote dividers between parent field names and child field names. If you don't intend to create field hierarchies, don't use period characters in field names.)
