My added text and comments won't print on the .pdf anymore. Did I turn something off accidently?

If you’ve added text as comments, then that would suggest that you’ve switched from printing “Document and Markup” to just Document:

And yes, it is not that hard - even for a paid program - you just make sure that you select the correct options.
