Need help printing a 5.5 x 8.5 booklet

I may have already posted this on here, but not sure. I have a directory I'm trying to paginate to have printed. I've done it before, but it's been years and different version of Acrobat. I cropped the pages to 5.5 x 8.5, I assume thats what I need to do. When I click booklet, the preview comes out with one side blank, all except the last page that shows two up. I can't figure out what settings I don't have correct.

Can someone give me some guidance? Last night when I was printing tests, some pages were flipping on the 11" side of the paper, which made every other page upside down. I tried the settin flip on short side, but that didn't help. I' sure this isn't difficult, I just can't figure out the settings.
